Christmas Butter Cookies

This Christmas Eve, start a tradition with your family by making Christmas butter cookies as a family.  Each year, since I was a little girl, my mother and I would bake these cookies on either Christmas Eve of the day before.  It is a fun, easy way to spend some relaxing quality time before the hectic holidays begin. Here is what you will need:cookies.jpg

  • 1 cup butter

  • 1 cup white sugar

  • 1 egg

  • 2 2/3 cups all-purpose flour

  • 1/4 teaspoon salt

  • 2 teaspoons vanilla extract

Here is what you are going to do:

  1. To begin, cream together the butter and white sugar in a large bowl, until light and fluffy.
  2. Next, beat in the egg, then stir in the vanilla.
  3. Combine the flour and salt, and stir into the sugar mixture. Cover dough, and chill for at least one hour.
  4. Chill cookie sheets, and preheat oven to 400 degrees F (200 degrees C).
  5. Press dough out onto ungreased, chilled cookie sheets and bake for 8 to 10 minutes in the preheated oven, or until lightly golden at the edges. Remove from cookie sheets to cool on wire racks.

 Happy Holidays!

Holiday Sugared Nuts Recipe

nuts.jpgTo follow suit with my holiday homemade sugar cookies recipes yesterday, today I am excited to share my recipe for Holiday Sugared Nuts. They are a great treat to have around the house, and are a wonderful addition to a holiday party.  Here’s what you will need…

Ingredients

1 egg white1/2 cup packed brown sugar2 tablespoons ground cinnamon1 teaspoon ground cloves1 teaspoon ground ginger1 tablespoon vanilla extract1 pound walnut halves

What to do:First preheat oven to 300 degrees F (150 degrees C), and then coat a baking sheet with cooking spray.Next, beat the egg white in a small bowl, until foamy. Stir in brown sugar, cinnamon, cloves, ginger, and vanilla. Then, add the nuts, and stir to coat. Once coated, spread the notes evenly onto prepared pan.Place the nuts in the oven and bake for 30 minutes, stirring occasionally, or until well toasted and golden brown, then remove them from the oven and let cool, and you are done.

For a fun spin on the recipe, use a variety of nuts (walnuts, almonds, macadamia, etc).
